Ancho Chile Devil's Food Cake1 1/4 cups cake flour1/2 cup unsweetened cocoa powder3 tablespoons pure ancho chile powder1/8 teaspoon cayenne1 teaspoon baking soda1/4 teaspoon baking powder1/2 teaspoon salt10 tablespoons unsalted butter (at room temperature)1 1/2 cups  granulated sugar3 large eggs (at room temperature)1 teaspoon vanilla extract1/2 cup buttermilk (at room temperature)1/2 cup hot coffeeSet a rack in the middle of the oven and preheat to 350 degrees F. Lightly grease two (9-inch) cake pans and line them with circles of parchment paper or greased wax paper.Sift flour, cocoa, ancho chile powder, cayenne, baking soda, baking powder and salt onto a sheet of wax paper. Sift 2 more times to mix and aerate.Put butter and sugar in the bowl of an electric mixer and beat at high speed for 30 seconds, or until well combined and smooth. Add eggs, one at a time, beating until each is incorporated. Continue beating, scraping down the sides of the bowl if necessary, until light and fluffy, about 5 more minutes. With the mixer on a low setting, or using a rubber spatula, beat or fold in one-third of the flour mixture. beat or fold in vanilla extract, half of the buttermilk and half of the coffee, then another one-third of the flour mixture. Beat or fold in the remaining buttermilk and coffee, then the remaining flour mixture.Spread batter evenly in prepared pans. Bake for 30 minutes or until the centers spring back when lightly pressed. Cool the cake layers in the pans on a wire rack. Invert each cake onto a plate. Trim the tops flat with a serrated knife. Spread one-third of the Ganache over one layer. Flip the other layer on top, and frost the top and sides of the cake with the remaining Ganache.Ganache6 ounces semisweet chocolate, coarsely chopped3/4 cup heavy creamPut chocolate in a small bowl. In a small saucepan, bring cream to a scald over medium heat. Pour the hot cream over the chocolate. Working from the center out, gently stir to melt and blend until smooth. Let the Ganache sit until slightly thickened, about 10 minutes. It should be spreadable, but still pourable. If the Ganache doesn't have a smooth patina, blend in a few drops of cold heavy cream. A matte finish will dry to a mirror shine.

Put sauerkraut in large kettle over low heat.Meanwhile, render the bacon or salt pork. Add bacon bits to sauerkraut.Saut? onions in bacon fat until golden; add chopped apples and cook until slightly browned. Add all to the kettle. Add diced meats and all the meat juices. Add enough beef broth, bay leaf, salt, pepper, a little sugar and some of the sauerkraut juice for tartness. Simmer slowly for 1 to 1 1/2 hours.Add wine and let stew bubble up. Cover and let stand until ready to use.

A Nun's Sigh (Beignet Souffl?s)From New Orleans. So called as they are light as a nun's sigh, being made of chou paste, which is the base for cream puffs and ?clairs.1 cup sifted all-purpose flourPinch of salt1 tablespoon granulated sugar1 cup water1/3 cup butter4 eggs1  teaspoon vanilla extractFat (for deep-fat frying)Confectioners? sugarSift together flour, salt and sugar and set aside. Heat water and butter together until butter melts. Add flour combination all at once, and stir rapidly with a wooden spoon until dough leaves sides of pan and forms a lump. Remove from heat and beat in eggs, one at a time, beating hard after each addition. When dough is no longer slippery-looking, stir in vanilla extract. Scoop up a heaping teaspoon of the dough and, with a second teaspoon, push it off into preheated fat (350 degrees F on deep-fat thermometer, or until a 1-inch cube of bread browns in 60 seconds). When puffed and golden brown, drain on paper towels. Sprinkle with confectioners' sugar and serve hot. Makes several dozen.

Hot Sausage Po' BoySource: Adapted from Bruce Aidells' Complete Sausage Book One of New Orleans' greatest specialties, the Po' Boy Sandwich, can be made with such humble ingredients as fried potatoes, or with elegant fillings like fried oysters or soft-shelled crab. Some of  the best are made with chaurice, or "hot sausage" as it's called in New Orleans.Creole Mustard-Mayonnaise Sauce 6 tablespoons Dijon mustard 3 tablespoons good commercial mayonnaise 1/2 teaspoon Worcestershire sauceTabasco sauce or other hot saucePo' Boy4 (6-inch) sections French bread 4 links spicy fresh sausage, such as New York-Style Spicy Hot Italian Sausage 3 cups finely shredded cabbage or lettuce 12 to 15 dill pickle slices 1/2 red onion, thinly sliced (optional) 1 large tomato, sliced (optional)To make the sauce, combine the mustard, mayonnaise and Worcestershire sauce in a small bowl. Add Tabasco to taste. Set aside.Preheat the oven to 350 degrees F.Warm the French bread for 10 minutes.Place sausage links in a heavy skillet. Add water to cover sausage and simmer until sausage is gray throughout (about 10 to 15 minutes.) Grill sausages for 15 minutes over medium heat, turning the links so they brown evenly.Slice the bread in half lengthwise, and spread generously with mustard-mayonnaise sauce on both sides. On one side, heap the shredded cabbage and lay over it the pickle slices, onion, and tomato. Fedup2here's GumboPosted by CookinMom at recipegoldmine.com 7/1/01 10:06:46 pmSource: Submitted by Princess FedUp2Here - ya-ya.com(feeds 4 Cajuns or 6 Yankees)1/2 cup flour1/2 cup vegetable/saffola oil (that's the roux)1/2 chopped onion1/2 chopped green bell pepperAs much  garlic as you can standWorcestershire sauceSaltPepperGreen onion tops (4 or 5, chopped)Smoked sausage, sliced into circlesVarious chicken parts - about 5 or 6 thighs is goodIn a small saucepan warm the oil on medium heat, pour in the flour and stir, stir, stir till it's dark brown (like mahogany) That's the roux.While that's goin', in a large pan brown the sausage until it's good and juicy in there - let the sausage stick a little - it'll add more flavor.Next, add your chicken parts - and a little salt/pepper to taste - brown that too. When the roux is the right color, add the onion, bell pepper and garlic - saut? till wilted.Add the whole mess to the pot of browned meat, add enough water to cover all the meat - and the Worcestershire - 1 tablespoon or 3 good shakes! Stir it up until everything is mixed well - no lumps from the roux - it should be really soupy/watery. If its not dark enough, add a little kitchen bouquet to darken it. Bring it to a boil. lower to simmer, cover and cook for about 40 minutes. Add green onion tops, cover and cook about 10 minutes.Serve over rice in a bowl, like soup - not like gravy!!! My mama used to make potato salad with it - but that's a lot of starch for one meal, so you could just make a green salad - this is a heavy meal, so you don't need a lotta sides....Bon Appetite!!!

Immediately stir in the other ingredients to blend. Cover with plastic wrap and let stand for 24 hours at room temperature.Drain and discard liquid from the cheese clabber.Line a colander with 2 layers of cheese cloth and turn cheese into colander. Place colander over bowl for more draining. Cover with plastic wrap and refrigerate for 36 hours.Place finished cheese into bowl use as desired. Keeps 2 weeks covered in the fridge. Makes 12 ounces.NOTES: The cheese only took 3 hours to make.After the Rennet tablet (crushed well) was sprinkled in the slightly cooled milk mixture, it clabbered right away (about 1 1/2 hours). I drained it in the colander then put it in the cheese cloth and wrung it dry carefully. The cheese needed several wringings with rest in between for sufficient drainage. The finished cheese resembles Feta crumble cheese but the flavor is like mild mascarpone. I put it in the food processor on high speed until it was very smooth and creamy like mascarpone. I freshened the taste with a few drops of lemon juice (store bought mascarpone contains citric acid).The cheese was not quite a smooth as the commercially whipped kind but the flavor was very good. This recipe is the closest thing to mascarpone that one can make at home with ease. A little tinkering with the proportions should yield a very good clone.

World's Largest Corn Chips Chili PieThis was fixed at Odessa, Texas in October, 1986 during the Permian Basin Oil Show. Proceeds from the chili pie feed were donated to the Odessa Youth Shelter. Foods were donated by the company of each brand name mentioned.5,000 pounds  cubed ground chuck 500 pounds onions, chopped (reserve 50 pounds for garnish) 225 gallons canned whole tomatoes, chopped 156 pounds William's Chili Seasoning MixGarlic to tasteChili powder to tasteSalt to taste 1,000 pounds Fritos brand corn chips 1,000 pounds pre-grated Kraft Cheddar cheeseLocate 10 people who will spend 3 days chopping onions. Bag the onions and store in a cool place. The morning of the event, brown meat in a 20 x 4 x 3-foot wood burning kettle using sterilized rakes. Add 450 pounds of chopped onions and continue "raking" until onions are tender. Add tomatoes, chili seasoning mix and other spices and simmer at least 5 hours, adding oak wood to kettle to keep temperature at 140 degrees F.Just before serving, add a layer of corn chips to chili surface. Top with layer of grated cheese and remaining onions. Serve by scooping all four layers into bowls. Flip pie as served so corn chips are on the bottom. As corn chips, cheese and onion layer is depleted, stir chili and add new layer of each to newly exposed surface. Repeat until all chili is served.Serves 20,000.

The rest are still secret.3 (6 ounce) packages chocolate chips2 cups nuts (any kind)2 teaspoons vanilla extract1 cup butter or margarineLet chocolate chips, nuts,  vanilla extract and butter stand until room temperature in a large bowl (overnight is fine).4 cups granulated sugar20 large marshmallows, cut up1 (13 ounce) can evaporated milkBring sugar and milk to boil in a large saucepan and keep at a rolling boil for 8 minutes. Dump this all at one time over the chocolate mixture. Add marshmallows and stir vigorously by hand until chocolate bits and butter are melted and mixture is smooth. Pour into a 15 x 13-inch cake pan or a 13 x 9-inch pan. Cool and refrigerate for 24 hours before eating.It will keep well in the refrigerator and will last...and last...and last.
