Coconut Amaretto BreadThis bread is delicious toasted.4 ounces tofu1 cup granulated sugar1/4 cup Amaretto*14 ounces coconut milk*2 1/2 cups all-purpose flour1/2 teaspoon salt1 tablespoon baking powder1 cup unsweetened coconut flakesPreheat oven to 350 degrees F. Grease a 9  x 5-inch loaf pan.Blend together tofu and sugar thoroughly in an electric mixer or by mashing them together in a large mixing bowl.Mix Amaretto and coconut milk into tofu until well blended.Meanwhile, sift together flour, salt and baking powder. Toss in coconut flakes, then add dry ingredients to liquid mixture and blend thoroughly. Spoon batter into prepared loaf pan. Bake until done, about 50 minutes. Cool slightly before removing from pan.* 1 teaspoon of almond extract and 1/4 cup of water may be substituted for the 1/4 cup of Amaretto. 1 1/2 cups water plus 1/4 cup oil may be substituted for the coconut milk.

Cajun Tofu2 pounds firm tofu, drained and cut into 3/4-inch cubes *1 medium red bell pepper, finely chopped1 medium green bell pepper, finely chopped1 large white onion, finely chopped1 cup chopped celery2 cans cooked, peeled tomatoes4 cans tomato sauce1 gallon water or  vegetable stock2 tablespoons finely chopped parsley1/2 cup finely sliced green onion tops2 tablespoons Worcestershire sauce2 teaspoons saltDiced red chiles, to taste1 minced haba?ero pepper2 1/2 teaspoons black pepper2 teaspoons garlic salt3 teaspoons paprika3 or 4 fresh bay leavesFresh parsley sprigsFry tofu in very hot olive or peanut oil until golden to seal. Pour oil from above into bottom of stock pot, adding enough to cover the bottom of the pot, if necessary. Make a roux by adding an equal amount of flour, cooking until thickened. Add remaining ingredients except parsley. Simmer for 25 minutes.Add drained tofu, place lid on pot and simmer for another 30 minutes, stirring occasionally. Add bay leaves and let cool for 15 minutes. Reheat if necessary and serve over steamed rice. Top with fresh parsley.

Sweet and Sour Tofu1 (20 ounce) container tofu1 (20 ounce) can pineapple chunks or tidbits1/4 cup packed brown sugar2 tablespoons cornstarch1/4 cup vinegar1 tablespoon soy sauce1 medium onion, sliced thin1 medium onion, sliced thinRice or Chinese noodlesDrain tofu in a  colander, then weigh down tofu with something heavy. Let it sit in the sink while preparing the sauce.Combine brown sugar, cornstarch, vinegar, soy sauce and juice from the pineapple in a saucepan. Bring to a boil until thick and clear.Slice tofu into cubes and add to sauce; marinate while rice cooks or 1 hour.Slice onion and pepper into thin strips. Combine with tofu and sauce and pineapple chunks. Heat until vegetables soften, then serve over rice or Chinese noodles.

Refrigerate for 1 to 2 hours or until firm.To make the croquettes, make quenelles using two tablespoons or roll the turkey mixture into small balls (about the size of a golf ball) and refrigerate on a sheet pan lined with parchment paper for 1 to 2 hours or until firm. Just before the croquettes are ready, prepare a bowl filled with the flour, a bowl with the beaten eggs, and a bowl with the bread crumbs. When the croquettes are ready, first cover them with flour, then dip them in the egg wash, and then cover them with the bread crumbs. One Pan Turkey 'n' Stuffing1 cup biscuit mix1 1/4 cups milk3 eggs1 teaspoon parsley flakes1 teaspoon dried sage leaves or 3/4 teaspoon ground sage1/2 teaspoon salt1/2 teaspoon poultry seasoning1/8 teaspoon pepper2 cups cut-up cooked turkey1 cup chopped celery1/2 cup finely  chopped onionHeat oven to 400 degrees F.Saut? celery and onion in butter.Grease a 10 x 6-inch or 11 x 7-inch baking dish.Mix baking mix, milk, eggs, parsley, sage, thyme, salt, poultry seasoning and pepper in a dish with fork until batter is of uniform color (batter will be lumpy). Stir in remaining ingredients. Bake until golden brown and knife inserted in center comes out clean. Bake in a 10-inch dish for 35 to 40 minutes; in an 11-inch dish for 30 to 35 minutes.

Champagne by the SpoonfulPosted by Annette at recipegoldmine.com 2/11/2002 11:09 amMakes 2 servings.Fresh berries suspended in champagne gelatin keep well for several days, so prepare this grown-up dessert on a day when you have an hour or two to keep an eye on the gelatin  mixture as it chills. Make sure you choose champagne flutes that are wide enough to accommodate a spoon. 1 1/4 cups champagne, chilled, divided 1/4 cup granulated sugar 1 teaspoon unflavored gelatin 1/4 cup fresh raspberries Rinse and dry two champagne flutes. In a small saucepan, heat 1/4 cup champagne with sugar and gelatin until sugar and gelatin dissolve and mixture comes to a simmer. Remove from heat and pour into a heatproof glass measuring cup. Add remaining chilled champagne. Chill until mixture just begins to mound on a spoon, one to two hours. Drop a couple of berries into each champagne flute. Pour in enough of the gelatin mixture to fill the flutes about halfway, taking care not to dribble down the sides of the glass. Drop in a few more berries. Divide the remaining gelatin mixture between the two glasses, and drop in a couple of more berries.Using a fork, gently push the berries to varying depths. Place the flutes in the refrigerator until gelatin is completely set, 1 to 2 hours.
