Molettes12 tablespoons unsalted butter (at room temperature)3/4 cup lightly packed light brown sugar1 large egg1/2 teaspoon vanilla extract2 teaspoons bourbon1/2 cup fine yellow cornmeal1 3/4 cups all-purpose flour1 large egg yolk beaten with 2 tablespoons water for egg  wash1/2 cup unsalted pine nutsPreheat oven to 375 degrees F.Combine butter and brown sugar in the bowl of an electric mixer and beat at medium speed for 30 seconds or until smooth. Add egg and beat for 1 minute or until well blended. Turn mixer to its lowest speed and add half of the flour and cornmeal, Blending just to combine. Beat in the bourbon and vanilla extract, then the remaining flour mixture.Roll dough between 2 sheets of wax paper to a thickness of 1/4 inch. Place on a baking sheet and refrigerate for 30 minutes or until firm.Cut out shapes with a cookie cutter and place them on a parchment paper-lined or nonstick cookie sheet. Brush the cookies with the egg wash. Gently press a few pine nuts into each one. Refrigerate the cookies for 10 minutes.Bake cookies for about 15 minutes, until very lightly browned around the edges. Cool on the baking sheet on a wire rack.

New Mexican Biscochitos1 3/4 cups unbleached all-purpose flour1 teaspoon baking powder1 teaspoon aniseed1/8 teaspoon salt1/2 cup unsalted butter, softened1/2 cup granulated sugar1 large egg1 tablespoon brandy1/4 cup granulated sugar1/2 teaspoon ground cinnamonMix flour,  baking powder, aniseed and salt together in a medium size mixing bowl. Cream butter and the 1/2 cup sugar in a large mixing bowl. Stir in the egg and brandy until the ingredients are just blended. Gradually stir in the dry ingredients and mix well to make a smooth dough. Cover the bowl with plastic wrap and chill the dough in the refrigerator for 2 hours or overnight.Roll out the dough, working with one-third of it at a time, to 1/8-inch thick on a lightly floured work surface. Cut the dough with fancy cookie cutters or use a handmade pattern.Carefully transfer cookie shapes to ungreased cookie sheets and sprinkle with a mixture of the 1/4 cup sugar and ground cinnamon. Bake cookies in a preheated 350 degrees F oven for 10 to 14 minutes, depending on their thickness, or until golden brown. Let the biscochitos stand for about a minute and then gently remove them with a spatula to wire racks to cool. Serve the biscochitos, or store them, once they are completely cooled, in an airtight tin at room temperature for up to 1 week.Makes about 3 dozen 2 1/2 to 3-inch cookies.

Mexican Cinnamon Cookies1 cup butter, softened1/2 cup confectioners' sugar2 1/2 cups sifted all-purpose flour1 teaspoon cinnamon1 teaspoon vanilla extract1/4 teaspoon salt1/2 cup granulated sugar or 3/4 cup confectioners' sugar1/2 teaspoon cinnamonIn large bowl with  electric mixer at high speed, beat butter until light and fluffy. At low speed, beat in 1/2 cup confectioners' sugar, flour, cinnamon, vanilla extract and salt just until combined. Dough will be stiff. Shape into a ball; wrap in wax paper. Refrigerate 30 minutes.Preheat oven to 400 degrees F.To make ball cookies, roll into 3/4-inch balls. To make flat cookies, roll into 1-inch balls and flatten with fingers to about 1/4 inch thickness. Place 1 1/2 inches apart on ungreased cookie sheets. Bake 10 minutes or until golden brown.Combine sugar and cinnamon. Roll hot cookies in mixture. Cool and sprinkle with remaining mixture.

PajasThese are traditional Mexican cookies.Yield: 20 servings1 cup pecan halves 1 tablespoon unsalted butter, melted 2 1/2 cups sweetened shredded coconut 1/2 cup chopped dried apricots 1/2 cup chopped semisweet chocolate or chips 7 ounces sweetened condensed milkPreheat  oven to 325 degrees F. Line a cookie sheet with parchment paper, or use a nonstick pan.Toss the pecans in the melted butter to evenly coat. Spread the nuts on an ungreased baking sheet and bake 10 to 15 minutes, or until golden and aromatic. Set aside to cool, and then chop roughly.Place the chopped pecans and the remaining ingredients in a bowl and mix with a wooden spoon until evenly moistened. Spoon about 2 tablespoons of batter for each cookie onto the lined baking sheet and gently flatten to circles of about 2 1/4 inches in diameter (these cookies do not spread). Bake 10 minutes or until the coconut turns very pale golden, being careful not to over-brown. Transfer to racks to cool. Yields 20 to 24 cookies.

Roll each half 1/4 inch thick on a lightly floured board. Cut into desired shapes with cookie cutters; place on ungreased cookie sheet. Mix 1/4 cup sugar and the cinnamon; sprinkle on cookies. Bake until light golden brown, 10 to 12 minutes.

Cut tiny new potatoes into quarters or the medium potatoes into 1-inch pieces. Place potatoes in a 1 1/2-quart microwave-safe casserole. Add butter or margarine, teriyaki sauce, garlic salt, Italian seasoning, black pepper and red pepper. Toss to combine.Cover; micro-cook on 100% power (HIGH) for 11 to 15 minutes or until potatoes are tender, stirring twice during cooking.Stir before serving. Garnish with snipped rosemary and serve with sour cream, if desired.Makes 5 side-dish servings.

Rusty's GazpachoPosted by LladyRusty at recipegoldmine.com 8/21/02 5:00:52 pm3/4 pound tomatoes, peeled seeded and diced*Green onions, sliced 1 medium cucumber, peeled, seeded and diced 1 large green bell pepper (or poblano), seeded and diced 3/4 pound tomatoes, peeled  seeded and diced* 2 cups tomato juice or V8 ** 1/2 teaspoon Worcestershire sauce 1 dash Tabasco sauce 2 tablespoons extra virgin olive oil 1 large clove garlic, pressed 1 teaspoon fresh chopped cilantro, no stems 1 teaspoon fresh chopped parsley, no stemsSalt, to tasteFreshly ground black pepper, to tasteIn a blender/food processor, puree 3/4 pound tomatoes with tomato juice/V8, Worcestershire sauce, Tabasco, olive oil, garlic, cilantro, parsley, salt, and pepper. Chill in a stainless steel, glass, or ceramic bowl until ready to serve (overnight is best).Combine 3/4 pound tomatoes with the onions, cucumber and pepper in a small stainless steel, glass, or ceramic bowl. Prepare these vegetables about 3 hours before serving and refrigerate.Ladle soup into individual bowls. Float vegetables on top of the soup. Serves 2 or 3.* I use Roma tomatoes when I can get them.** I prefer V8 but have used both.

Passion Fruit Syrup8 large passion fruit1 cup granulated sugar1/2 cup waterHalve passion fruits and scoop out pulp into a sieve. Rub through a sieve to separate juice and seeds. Discard seeds and measure juice to slightly less than half a cup.In a small saucepan mix sugar  and water and stir to dissolve. Bring to the boil and boil for 5 to 7 minutes or until syrup spins a thread when dropped from the tines of a fork. Add passion fruit juice, return to boil and boil for 1 minute. Pour into small, hot, sterilized bottles and seal while hot. Put into a boiling water bath for 10 minutes.

Apple Juice Syrup1 cup granulated sugar2 tablespoons cornstarch1/4 teaspoon cinnamon1/4 teaspoon nutmeg2 cups apple juice2 tablespoons lemon juice1/2 cup butterMix sugar, cornstarch, cinnamon and nutmeg in a saucepan. Stir in apple juice and lemon juice. Heat to boiling,  stirring constantly. Boil for one minute. Blend in butter. Serve warm over apple pancakes. Top with sour cream.
