Transfer to a bowl.Heat an 8-inch crepe or omelet pan over moderately high heat. Lightly butter the pan and add 2 tablespoons batter; working quickly, swirl the pan to coat it evenly. Cook until the top of the crepe is dry and the bottom is lightly golden about 1 minute. Flip the crepe and cook until the bottom is lightly golden, about 20 seconds longer. Transfer the crepe to a large plate and repeat with the remaining batter to make a total of 16 crepes.Preheat the oven to 375 degrees F. Coat the bottom of a 3-quart baking dish with 1 cup of the tomato sauce. Arrange the crepes on a work surface. Spoon 3 tablespoons of the ricotta filling in a line down the center of each crepe. Loosely roll up the crepes and arrange them, seam side up, side by side in the baking dish. Pour the remaining 2 cups of tomato sauce over the manicotti and sprinkle with the Parmesan cheese. Bake for 15 to 20 minutes, or until the tomato sauce is bubbling and the manicotti are heated through. Serve piping hot. Makes 8 servings.Make Ahead: The unbaked manicotti can be refrigerated overnight. Allow up to 15 minutes longer for baking.

Pour batter into the pan and spread out evenly. Bake for 15 minutes. Cool for 5 minutes, then turn onto a cloth to cool. After 10 minutes peel paper off. Combine whipped cream, rum and sugar. Adjust to taste. Spread over cake and roll cake like a jellyroll, starting with the long edge. Sprinkle with remaining confectioners' sugar. Serve in slices.* Superfine Sugar: Put desired amount of granulated sugar in a blender and blend at high speed for about 30 seconds.

Top with the other tortilla and brown in a lightly greased skillet. Turn and brown on the other side. Cut into wedges.You can also add fajita chicken. This is the recipe that I use.Fajita ChickenI cannot recall the source.3 pounds boneless, skinless chicken breastVegetable oil2 tablespoons chili powder1/2 teaspoon oregano4 tablespoons fresh squeezed lime juiceSoak chicken in salt water for 1 hour. Pat dry. Brush the chicken with vegetable oil. Make a paste from the chili powder, oregano and lime juice. Rub the paste over the chicken and refrigerate for several hours. Grill. Slice very thin after grilling. Make your fajitas.

Pickled Pigs' Feet (Souse)4 pigs' feet1 cup chopped pickles2 cups vinegar2 cups stock2 tablespoons salt1 tablespoon whole cloves1/2 teaspoon black pepper1 tablespoon broken cinnamon stickScrape and clean feet well and put on to boil in enough salt water to cover. Simmer for approximately 4 hours or until meat separates from bones.Mix stock in which meat was cooked with vinegar, salt, pepper and spices. Bring to the boiling point, and hold for 30 minutes.Strain liquid to remove spices.Place pieces of meat and chopped pickle in a flat dish or stone jar and pour the sour liquid over it. Chill in refrigerator until perfectly cold. Slice and serve.
