Spread cream cheese over  ham before wrapping it around the pickles. Wrap in wax paper. Cool overnight.Slice and serve.

Dill Weed Dip1 cup sour cream1 cup mayonnaise1 tablespoon parsley1 teaspoon Spice Island dill weed1 tablespoon Spice Island shredded scallion1 teaspoon Spice Island Beau MondeMix well and refrigerate.If desired, put the dip into a rye loaf for serving. Slice the top off a  round loaf of rye bread and put aside. Pull the bread from the inside of the loaf, and tear into bite size pieces. Fill the inside of the loaf with the dip. Lean the bread top against the loaf when serving on a platter, surrounded by the bread pieces and raw vegetables. When the dip is gone, cut the loaf into small pieces and serve.

Basic Frosting1 (1 pound) box confectioners' sugar1/3 to 1/4 cup Crisco?1/2 teaspoon salt1 scant teaspoon cream of tartar1/4 cup water1/2 teaspoon vanilla extract, or flavor desiredMix all ingredients together and beat at medium speed with mixer for 7 to 8 minutes, or until  smooth and lump-free. Stop, then beat again. If too thick, add drops of water while beating until of desired consistency. Tint icing the color or colors desired using a paste cake coloring such as Wilton. Regular food coloring tends to run.Icing or icing leftovers will keep indefinitely in the refrigerator. To use later, beat again to make smooth. A little water may need to be added. Icing may be spread directly on cake or piped through decorative tips.

Cherry Upside-Down Cake1/2 cup butter1 1/3 cups granulated sugar1 teaspoon vanilla extract2 cups cake flour1/4 teaspoon salt2 teaspoons baking powder, divided2/3 cup water3 egg whitesPreheat oven to 350 degrees F.Cream butter and sugar; add vanilla extract. Sift flour with  salt and 1 1/2 teaspoons of the baking powder and add alternately with the water to the butter mixture, beating well after each addition. Beat the remaining baking powder with the egg whites until stiff. Fold whites into mixture. Divide batter into two greased and floured 9-inch layer pans.Sauce1 (1 pound 4 ounce) can pitted sour cherries1 cup granulated sugar1 teaspoon red food coloringDrain cherries well, saving the juice. Measure 3/4 cup of juice. Add water if needed to make up the difference. Combine juice, cherries, sugar and coloring. Heat to the boiling point. Pour hot cherry sauce over cake batter. Bake for 35 minutes. Cool for 3 minutes. Turn upside down. Place layers using sauce as both filling and topping. Serve with whipped cream.

Milk-Free Cocoa Fudge3 cups granulated sugar2/3 cup cocoa1/8 teaspoon salt1 1/2 cups mocha mix or nondairy coffee creamer1/4 cup margarine1 teaspoon vanilla extract1 cup nuts (optional)Over medium heat bring all ingredients except margarine and vanilla extract to a boil.  Continue boiling until mixture reaches 234 degrees F or to soft-ball stage.Remove from heat. Add margarine and vanilla extract. DO NOT STIR. Cool to 110 degrees F. Add nuts. Beat until fudge thickens. Pour into buttered pan. Cool.

Brandy Rum Balls2 (7 1/2 ounce) package vanilla wafers, crushed into fine crumbs1/2 cup honey1/2 cup light or dark rum1/3 cup brandy1 pound walnut pieces, finely groundVegetable oilGranulated sugar for rollingIn a large mixing bowl, combine wafer crumbs, honey, rum,  brandy and walnuts and mix until well blended. Rub a little vegetable oil on your hands and roll small pieces of the mixture between your palms to form balls about the size of large marbles. Roll each ball in granulated sugar and store in an airtight container up to 2 weeks.Yields about 55 balls.

Quaker Puffed Rice Balls1/2 cup corn syrup1/2 cup molasses1 cup granulated sugar2 tablespoons vinegar2 tablespoons butterAbout 6 cups puffed rice cerealBoil syrup, molasses, sugar and vinegar until it snaps when tested in cold water (see note). Remove from heat, add butter,  allow bubbling to die down, then pour over puffed rice. Mix well with a spoon and, when slightly cool, form into balls.NOTE: This recipe refers to the "hard crack" stage in candy making. Cook the syrup to 300-310 degrees F (using a candy-making thermometer). To test, drop a small amount of syrup into very cold water. If the syrup separates into hard, brittle threads, it's ready to be removed from the heat.Makes about 10 baseball-size balls.

Bittersweet Black Bean and Corn Relish1 (16 ounce) bag black turtle beans 4 cups frozen kernel corn 1 medium red bell pepper 2 medium green bell peppers 2 large, fresh pineapples 1 cup honey mustard dressing, any brand 2 teaspoons coconut extract 1/2 cup pina colada mix 1  teaspoon Caribbean blend jerk seasoning1 cup extra virgin olive oilClean and cook beans as directed adding salt and pepper to taste. When tender, rinse under cold water, being careful not to break the beans apart. Refrigerate.Thaw corn and mix with black beans. Drain.Remove seeds from peppers and dice into small pieces. Skin the pineapples; core and dice into small pieces. Mix peppers and pineapple with remaining ingredients separate from bean mixture.Fold together with the bean and corn mixture; refrigerate until ready to serve.Great served as a dip with banana chips, stuffed in a pita pocket for a vegetarian sandwich, or as a salad topper for tossed greens.Yield: 1/2 gallon

Smoked Ribs with Honey-Mustard SauceHickory chips5 pounds pork spareribs1/2 cup honey1/4 cup firmly packed brown sugar1/4 cup prepared mustard1/2 teaspoon maple flavoringSoak hickory chips in water at least 15 minutes. Prepare charcoal fire in smoker; let burn 15 to 20  minutes or until coals are white. Place hickory chips on coals. Place water in pan in smoker; fill with water. Place ribs on food rack. Cover with smoker lid; cook ribs 3 hours.Combine honey and remaining ingredients in a saucepan; cook over medium heat, stirring constantly, until sugar dissolves. Baste ribs with sauce; cover and cook 30 minutes.Turn ribs over, and baste again with sauce. Cover and cook an additional 30 minutes.Yields 5 to 6 servings.

Squash Blossom Soup60 squash blossoms, washed1 tablespoon unsalted butter1/2 cup chopped wild onions or yellow onions2 garlic cloves, finely chopped1 teaspoon salt1/2 teaspoon white pepper6 cups chicken stock18 sprigs fresh chervil (for garnish)If using male squash  blossoms, remove the stamens. Set aside.Melt the butter in a saucepan over medium heat. Add the onions and garlic and saut? until the onions are translucent. Reduce the heat to low, add the salt, pepper and squash blossoms and saut? for 3 minutes, stirring occasionally to prevent burning. Add the stock, bring to a boil over high heat, reduce the heat to low, and simmer for 10 minutes. Remove from the heat and serve hot, garnished with sprigs of chervil.

Herman Good Samaritan CoffeecakePosted by FootsieBear at recipegoldmine.comSource: Recipe by Gloria Pitzer1 cup starter1 1/2 teaspoons baking powder3 large eggs1 teaspoon vanilla extract1/2 cup buttermilk1/4 pound margarine, melted1/4 teaspoon salt1 teaspoon orange  extract1/2 teaspoon baking soda1 cup granulated sugar2 cups flour1/4 teaspoon nutmeg1 cup chopped walnuts or 1 cup flour-dusted raisinsBeat all ingredients together as listed above, beating 6 minutes with addition of last ingredient. Divide batter between two 9-inch greased foil cake pans placed on a cookie sheet on center rack of oven. Bake at 350 degrees F for 30-35 minutes or till browned.Pierce each cake 25 to 30 times with a toothpick and drizzle with thinned vanilla icing while hot from the oven. Then spread each cake with 2 tablespoons orange marmalade or pineapple preserves. Sprinkle top with shredded coconut and place a thin slice of orange in the center for garnish. Wrap in foil and take to a friend along with a cup of Herman and the directions for adding to the starter. Keep one cake for yourself. They freeze for months.
