Dead Heat Kentucky BurgooSource: The Kentucky Derby Museum Cookbook1 fat hen (4 pounds) 1 to 2 pounds stew meat (beef, veal and/or lamb) 3 to 4 pints water 1 1/2 teaspoons coarsely ground pepper 1/2 teaspoon cayenne pepper2 small cans tomato puree 12 potatoes 2 large  onions, chopped 1 large head cabbage, finely chopped 6 to 8 medium tomatoes, peeled, chopped OR 3 (1 pound) cans tomatoes 6 to 8 ears of corn, cut off the cob OR 3 (1 pound) cans cut corn1 pound fresh carrots, sliced 1 to 2 tablespoons salt 1 teaspoon pepper 1/2 to 1 cup Worcestershire sauce 2 cups fresh sliced okra (optional)2 cups fresh cut butterbeans (optional)2 green peppers, finely chopped (optional)Cook chicken and other meat in water with coarsely ground pepper and cayenne pepper until chicken will leave the bones and the meat is very tender (about 40 minutes). Remove bones, shred meat and return to the liquid. Add tomato puree, potatoes, onions, cabbage, tomatoes, carrots and corn. Season with salt, pepper and Worcestershire sauce.Cook slowly for 2 to 3 hours, until consistency of a thick stew, stirring from the bottom to keep from scorching. Add water, if necessary, to keep from sticking. If you like additional vegetables, add 2 cups fresh cut butterbeans, 2 cups fresh sliced okra and/or 2 green peppers, finely chopped.Serves 10.

1 teas. Salt 1 1/2 cup Warm water divided (110F) 3 1/2 cups Unbleached white flour 1/4 cup Corn meal 1/4 cup Whole wheat flour 4 tbls. Olive oil divided 2 teas. Light brown sugar 2 pks. dry yeast Sauce, Cheese, and Toppings of your choice (keep in mind the cooking  time of these will be shorter than in an oven.
Use toppings that take little time at all (if any) to actually cook and do not
overload. Try using a soft or crumbled cheese and a cooked, warm sauce.)|DOUGH: Measure 1/2 c warm water in a bowl. Add sugar and yeast and
stir to dissolve. Let stand at least 5 minutes to proof (froth forms on top).
Meanwhile, sift together into a large bowl the white flour, wheat flour,
corn meal and salt. Make a depression in the middle and add 3 Ts of the
olive oil and 1 c warm water. Add yeast mixture. Mix all ingredients with
your hands and gather together and place on floured board. Knead about
10 minutes, adding more flour if dough is sticky, to form a smooth, elastic
mass. Grease a large bowl with olive oil. Add dough, turning it to coat top.
Cover and let rise in warm place, draft−free location until doubled in size −
about 45 minutes.
While dough is rising prepare desired sauces and toppings. Divide dough
into 6 equal pieces and, on floured surface, roll out to desired shape about
1/2 inch thick. Coat both sides of shaped crust with olive oil, then place on grill
directly over fire until upper surface begins to bubble (about 2 minutes). Fire
must be very hot and grill must be clean (coals should be red with a small flame,
like a steak fire; this is important). Watch crust closely and rotate with spatula
if necessary. Remove crust and turn cooked side up (it should be golden brown).
Brush with olive oil, sauce, cheese and desired toppings. Sprinkle some olive
oil over each pizza. Return for final cooking (2−4 minutes).

Heath Bar Cake2 cups packed brown sugar2 cups all-purpose flour1/2 cup butter or margarine1 teaspoon baking soda1/2 teaspoon salt1 egg1 cup milk1 teaspoon vanilla extract1/2 cup chopped nuts6 Heath? Bars, broken in small piecesBlend brown sugar, flour and butter. Set aside  1 cup of mixture to be mixed later with nuts and Heath? Bars. Add baking soda, salt, egg, milk and vanilla extract and beat. Pour into a greased 13 x 9-inch cake pan.Combine 1 cup mixture that was set aside, nuts and Heath Bars. Sprinkle over cake. Bake at 350 degrees F for 35 minutes.

Sprinkle dry cake mix over fruit. Dot margarine on top of cake mix. Cover tightly, set in coals of  campfire, putting coals on lid also, and let cook until cake is lightly browned. Rotate Dutch oven one quarter turn every 15 minutes for even cooking, especially if the active fire is only on one side of the Dutch oven. Recipe can be halved easily.Serves 24.

King David's Chocolate-Covered Coconut Macaroons3 1/2 cups unsweetened shredded coconut 1/4 cup matzo cake meal 1 1/4 cups granulated sugar, divided2 large eggs, plus 1 egg white 1/2 cup (4 ounces) imported bittersweet chocolate 1/4 cup waterCover 2 baking sheets with  parchment paper.In bowl, mix together coconut, matzo cake meal and 1 cup of the sugar. Add eggs and extra egg white and mix with fingers until well blended. Gently shape about 2 tablespoons dough into a pyramid and set on prepared baking sheet. Repeat with remaining dough, leaving about 2 inches in between cookies. Bake at 325 degrees F for about 25 minutes or until golden on top. Cool completely.In saucepan, melt chocolate with the water and remaining 1/4 cup sugar. Bring to boil, then simmer slowly for a few minutes until mixture starts to thicken. Cool slightly. Holding each macaroon with 2 fingers, dip half the cookie into the chocolate so that it is half black and half white. Allow to dry few seconds tilted over a dish, then place on wax paper. Repeat with remaining cookies. Cool completely.Makes 16 macaroons.Per serving: 186 calories; 8 g fat (4.9 g saturated fat; 39 percent calories from fat); 29 g carbohydrates; 27 mg cholesterol; 15 mg sodium; 2.1 g protein; 1 g fiber

It's wonderful on banana cake!1 package (4 serving size) vanilla instant pudding mix1/4 cup confectioners'  sugar1 cup cold milk1 (8 ounce) container Cool WhipCombine pudding mix, sugar and milk in a small bowl. Beat slowly with a rotary beater or at lowest speed of an electric mixer until well blended, about one minute. Fold in whipped topping. Spread on cake at once.Makes about 4 cups or enough for two 9-inch layers. Frosted cake should be refrigerated. For firmer frosting let pudding mixture stand 5 minutes before adding Cool Whip.

Angel FudgeSource: Hershey's 1934 Cookbook2 cups granulated sugar 1 cup milk 1 cup Hershey's syrup 1 tablespoon butter 1 teaspoon vanilla extract3/4 cup Marshmallow CremeButter an 8-inch square pan.In heavy 3-quart saucepan, combine sugar, milk and syrup. cook over medium  heat, stirring constantly until well blended. Continue to cook, without stirring, to 234 degrees F or until syrup, when dropped into very cold wave, forms a soft ball which flattens when removed from water (bulb of candy thermometer should not rest on bottom of saucepan).Remove from heat. Add butter, vanilla extract and Marshmallow Creme. Do not stir. Cool at room temperature to 110 degrees F (lukewarm).Beat with wooden spoon until fudge loses glass. The fudge will hold its shape. Quickly spread into prepared pan; cool.Cut into squares.Yield: 36 candies.

Saint Basil's Bread (Vasilopeta)Source: Lior's Kitchen TalkA Greek New Year's bread.The cakes differ in the various regions of Greece: some are a type of bread, others a type of rich yeast cake, others are flat, made of cookie dough. The cakes may differ, but all include  the customary hidden silver coin. It symbolizes good luck to the person who finds the coin in his piece of cake. The head of the family cuts slices in a very precise order. The first piece goes to Saint Basil for the cake is made in his honor. The second piece goes to Christ. The third piece is for the oldest member of the family, and on down to the youngest. The following recipe is the most traditional version.2 cups granulated sugar 3 cups all-purpose flour 6 eggs 2 teaspoons double-acting baking powder 1 cup lukewarm milk 1/2 teaspoon baking soda 1 1/2 tablespoons fresh lemon juice 1/2 cup chopped nuts (walnuts, almonds, or pistachios) 1/4 cup granulated sugarPreheat oven to 350 degrees F.Cream butter and sugar together until light. Add flour and stir until mixture resembles coarse meal. Add eggs, one at a time, beating well after each addition. Stir baking powder into milk and stir into egg mixture.Mix baking soda and lemon juice and stir in. Mix well. Pour into a greased round layer cake pan 10 inches in diameter and 2 inches deep. Randomly throw in a clean coin. Bake for 20 minutes.Sprinkle with nuts and sugar and bake 20 to 30 minutes longer, or until cake tests done. Cool 10 minutes in pan and invert onto serving plate. Serve right side up.

1 cup dry unseasoned bread crumbs 1/4 cup white sugar 1/3 cup melted butter 5 cups peeled and sliced apples (5 to 6 medium- sized apples) 1/2 cup brown sugar 1 teaspoon cinnamon 1/2 teaspoon nutmeg Zest and juice of 1 lemon 1/2 cup chopped walnuts|Preheat the oven  to 350F. Lightly butter a 1 1/2-quart baking dish. Combine
 the bread crumbs with the white sugar and butter. Pat half of the mixture in
 the bottom of the baking dish. Combine the apples, brown sugar, cinnamon,
 nutmeg, lemon juice and zest, and walnuts. Spread over the crumbs. Top with
 the remaining crumbs. Cover and bake for 40 minutes. Then remove the cover,
 increase the heat to 400F, and continue to bake for 10 more minutes. Serve
 warm with cream, whipped cream, or ice cream.

About 20 of us sat there eating it with crackers and hot sauce; talk about a bottomless bowl!!!!5 cups water, chicken or beef broth2  packages Oak Grove Smokehouse Dirty Rice Mix*2 1/2 pounds ground round,3 bunches chopped green onions, with topsMinced garlic or garlic powder to taste1 small finely chopped green pepperCrushed red pepper to taste3 to 4 pounds spicy smoked sausageBring broth to a boil. Add dirty rice mix, stir; return to boil. Cover, reduce heat and simmer 20 minutes. Remove from heat and set aside for 20 minutes.Pour cooked rice mix into very large bowl.Brown ground round with onions, garlic, green pepper and crushed red pepper flakes. Do not drain.Cut sausage into 1/2 inch slices and then again in half or into quarters. Brown and drain.Mix all together in bowl with rice and let set at least 2 hours for flavors to blend in, then adjust seasonings to taste. Maybe reheated before serving if desired.Lorraine's Note: I don't add salt because the rice mix has a lot of salt in it. This makes enough to fill 2 gallon size freezer bags & it freezes well.*If you can't find this, Zatarain's Dirty Rice works quite well, other name brands will do.

Add eggs; whip together. Add vanilla extract. Stir in coconut flakes, raisins and chopped pecans. Melt butter over low heat. Add milk, heating just enough to scald. Add to sugar-egg-coconut mixture. Place in a 12 x 8-inch baking dish with the French bread cubes. Put into a cold oven; bake at 350 degrees F for one hour.Serves 8.

Add all the liquid ingredients and simmer for 20 seconds.Add a "slurry," equal parts of cornstarch and water mixed together (a teaspoon or two of each) to thicken the sauce. Consistency should be thick enough to stand on top of the noodles.Pour sauce over a serving plate of hot cooked noodles. Garnish with bean sprouts and julienned cucumbers.Servings: 4

Fill paper-lined muffin cups three fourths full. Bake for 18-22 minutes or until a wooden pick inserted in the center comes out clean. Cool on wire rack.If desired, add food coloring to frosting. Frost cupcakes.Yields 1 dozen.
