Maya Angelou's Banana Meringue PuddingShared by Cara with recipegoldmine.com3/4 cup plus 1 tablespoon sugar 1/3 cup cornstarch Pinch of salt 3 cups milk 8 eggs, separated 3 tablespoons butter 1 tablespoon pure vanilla extract 3 cups vanilla wafers 4 ripe bananas, thinly  sliced 1/2 teaspoon cream of tartarPreheat oven to 350 degrees F.In a large saucepan, combine 1/3 cup sugar, cornstarch and salt; stir until blended. Mix in milk. Cook over medium heat, stirring constantly until thickened and boiling. Boil for 1 minute, then remove from heat.In a small bowl, whisk egg yolks, then whisk in 1/2 cup of hot custard until blended. Pour yolk mixture back into saucepan of custard; cook over medium heat, stirring, 2 minutes. Stir in butter and vanilla until blended.Place vanilla wafers on bottom of a shallow 2 quart casserole dish. Top with layer of banana slices and custard. Repeat layering, ending with custard.In a large mixing bowl, beat egg whites and 1/4 cup sugar at low speed until frothy. Add cream of tartar; increase speed to medium and gradually beat in remaining sugar. Beat until egg whites hold stiff peaks.Spoon meringue over hot custard immediately, making sure that meringue touches baking dish on all sides (to prevent it from shrinking). Transfer to oven and bake until golden, about 20 minutes. Remove from oven and cool for at least 1 hour. Refrigerate at least 4 hours before serving.

Apple Spice Dump Cake1 (18.25 ounce) box spice cake mix2 (21 ounce) cans apple pie filling1 teaspoon ground cinnamon1 teaspoon ground nutmeg1 teaspoon ground allspice1 tablespoon granulated sugar3/4 cup butter1 cup chopped nutsPreheat oven to 350 degrees F.Pour the apple  pie filling into a 13 x 9-inch baking pan.In a small bowl, mix together cinnamon, nutmeg, allspice and sugar. Sprinkle mixture over pie filling.Pour dry cake mix over apples. Dot with butter and sprinkle nuts on top.Bake at 350 degrees F for 45 minutes to one hour, until cake is brown on top and bubbling on the sides.Serve warm with ice cream or whipped topping.

We make the dressing all the time for "regular" salads.1/3 cup  salad oil2 tablespoons raspberry vinegar3 tablespoons granulated sugar1 tablespoon sour cream1 1/2 teaspoons Dijon mustard1/2 cup fresh raspberries (or 1 package frozen, without syrup)1 cup torn Romaine lettuce1 cup torn green leaf lettuce1 cup head lettuce1 cup Bibb lettuce1 (8 1/2 ounce) can baby artichokes, drained1/2 cup walnuts, toastedIn a small bowl, combine oil, vinegar, sugar, sour cream, and Dijon mustard. Whisk until blended. Fold in raspberries, cover, and refrigerate 1 hour.Cut the artichokes in bite size pieces and toss with the lettuce. Arrange the salad on serving plates and sprinkle with the walnuts. Drizzle the dressing over the salad and serve.

St. Patrick's Day Cookie Pudding Cake1 (18.25 ounce) box yellow cake mix1 small box pistachio instant pudding and pie filling4 eggs1 cup orange juice1/4 cup vegetable oil2 drops green food coloring1 1/2 cups broken chocolate wafersPreheat oven to 350 degrees F. Grease and  flour a 10-inch Bundt pan.Combine cake mix, pudding mix, eggs, orange juice, oil and coloring in large mixer bowl. Blend, then beat at medium speed of electric mixer for 4 minutes. Stir in wafers. Pour into prepared pan. Bake for 50 to 55 minutes or until a wooden pick inserted in center comes out clean and cake begins to pull away from sides of pan. Do not under-bake. Cool in pan about 15 minutes.Remove cake from pan and finish cooling on rack. Sprinkle with confectioners' sugar, if desired.

Slice garlic thin and add to butter until garlic browns. Add parsley to  taste.Add Baileys and stir for 2 minutes. Add shrimp and cook until they begin to turn pink. Turn them over and cook for 1 minute. Serve.

2 tablespoons vegetable oil 1 medium onion -- chopped (1/2 cup) 1 clove garlic -- finely chopped 1/2 cup chili sauce 1/2 teaspoon salt 1/4 teaspoon pepper 1 (12 ounce) can beer or  nonalcoholic beer (1 can or
                        bottle)
  3 1/2         pounds  beef rolled rump roast (3 1/2 to 4 pounds)
  2               cups  hickory wood chips
|Heat oil in 1-quart saucepan over medium-high heat. Cook onion and garlic
in oil, stirring frequently, until onion is tender; remove from heat. Stir
in chili sauce, salt, pepper and beer. Place beef in shallow nonmetal dish
or heavy-duty resealable plastic bag. Pour beer mixture over beef; turn
beef to coat with marinade. Cover dish or seal bag and refrigerate,
turning beef occasionally, at least 8 hours but no longer than 24 hours. 

Cover wood chips with water; soak 30 minutes. Brush grill rack with
vegetable oil. Heat coals or gas grill for indirect heat. Remove beef from
marinade; reserve marinade. Insert spit rod lengthwise through center of
beef; hold firmly in place with adjustable holding forks. Insert barbecue
meat thermometer so tip is near center of beef but not touching spit rod.
Drain wood chips. Allow about 
1/2 cup wood chips to medium-low coals or rock. 

Cover and grill beef on rotisserie over drip pan and 4 inches from
medium-low heat about 2 hours for medium doneness (160? on meat
thermometer), brushing occasionally with marinade and adding 1/2 cup wood
chips to coals or rock every 30 minutes. Remove spit rod, holding forks
and thermometer. Discard any remaining marinade. 

Cover beef with aluminum foil and let stand 15 minutes before slicing.

Add the chili powder and cook for two to three minutes. Add the remaining ingredients. Simmer until reduced to desired consistency. Blend using a hand blender. Correct the seasoning, then cool, label and store.

Flame several orange peels into the glass. Add the vodka and strain into the seasoned glass. Garnish with an orange peel.Flaming: You can create a festive pyrotechnic display for your guests with the oil present in the skin of lemons and oranges. To flame the oil, hold a lit match in one hand, and the twist in the other. Hold the twist by the side not the ends, between thumb and forefinger, skin side down, about 4 inches above the drink. Don't squeeze or you'll lose all the oil before you flame. Hold the match between the drink and the twist, closer to the twist. Snap the twist sharply, propelling the oil through the lit match and onto the surface of the drink. (Be sure to hold twist far enough from the drink to avoid getting a smoky film on the glass.)Yield: 1 drink

Anna Brown of Tuscaloosa, Alabama, shared it with her mother-in-law many years ago.It is a nice, refreshing side dish on a hot, summer day.Soften 2  packages unflavored gelatin in 1/4 ? 1/2 cup water.Boil together 1 cup water, 1 cup sugar, 1/2 cup vinegar and 1/2 teaspoon salt. Bring to a ?good boil? so that all sugar is dissolved. Add softened gelatin to hot mixture. Stir well to dissolve gelatin. Let mixture cool until it begins to set (you may have to refrigerate briefly).Mix 1/2 cup chopped celery, 1/2 cup chopped pecans, 1 small pimento, chopped (you can always ?rob? the olive jar), 1 can cut asparagus with its juice, 2 1/2 tablespoons lemon juice and a small amount of onion juice or minced onion. Mix into gelatin mixture. Pour into salad mold coated with a light ?greasing? of mayonnaise. Chill until firm.

Add onion, bell pepper and celery. Cover and cook on medium heat 30 minutes or until pork is almost done.Skim off excess oil. Add water, broth, margarine, salt, black and red pepper and pimiento. Bring mixture to a boil. Add rice, stir and add black-eyed peas. Cover and cook 30 minutes or until rice is cooked. Add parsley and onion tops the last 5 minutes.

Set aside. In another mixing bowl combine the peaches and apricot preserves. Spread a thick layer of the cream cheese mixture on one half of the tortilla. Top with peaches. Fold over tortilla. Repeat process with remaining ingredients.Place quesadilla on a heated and lightly buttered flat grill or saut? pan. Cook until golden, approximately 2 minutes per side. Serve.

O'Donoghue's Beef Stew1 1/2 pounds round steak or stew beef3 medium carrots 3 medium parsnips 1/2 cup barley, pearled 8 potatoesStock or soup mixture (beef or oxtail)Salt and pepperMixed herbsBoil some water in a large saucepan, sufficient to cover the meat and have  approximately 1 inch left above. Put in the chopped (large chunks) meat, lower heat to keep the stew simmering, put in the chopped/ diced carrots and parsnips, add herbs, salt and pepper to taste, leave simmer for a while (say 20 minutes).Add the peeled whole potatoes and some stock/ soup mixture or cornflour (cornstarch mixed with cold water) to thicken. Keep the mixture simmering and stir occasionally; after about 1 hourr from start time, taste and check the potatoes.Remember the best stews are left on for a long time, 1 1/2 hours or more.

Add onions and saut? with garlic, parsley, oregano, basil, red pepper. Saut? until tender 5 to 10 minutes. Add cumin, chili powder, cayenne pepper, chili sauce and beans. Heat through.While bean mixture cooks, put mixed vegetables in medium size pot. Add enough water to cover vegetables. Bring to simmer over medium heat until vegetables are almost tender, 10 to 15 minutes, adding vegetables with longest cooking times first.Add the vegetable mixture to the bean mixture and bring to boil. Reduce heat and simmer 15 minutes.Makes 6 to 8 servings.
