Stir in pineapple juice, ketchup and green pepper sauce, mixing well.Add smoked sausage to sauce; bring to boil; reduce heat and simmer for 10 minutes.Serve over rice, if desired.Nutritional information: Calories: 471 Total Fat: 39 Carbohydrates: 17 Protein: 18

It has great texture and chew. You can't ruin it. Best of all, you can double the recipe if you have a  2-pound loaf bread machine. So it's as easy to make two loaves as one. Just keep an eye on it toward the end of the dough cycle and remove it if it's going to spill over, and flour a large surface area on which to put the dough. This is my adaptation of Millie's recipe. It specified 2 3/4 cups all-purpose flour and 1/4 cup sugar. Millie didn't specify pan size so I chose 5 x 9 inches. I added the option of baking at 350 degrees F. Place in bread machine pan in order given: 1 cup plus 2 tablespoons hot water1/4 cup canola or other non-saturated oil3 1/4 to 3 1/2 cups all-purpose or bread flour (13 to 14 ounces)2 tablespoons granulated sugar 1/2 teaspoon salt 1 teaspoon bread machine yeast Put through dough cycle; check that there is enough flour during first mix. When dough cycle is finished, put dough on floured surface. Let stand 15 minutes.Knead 3 or 4 times (dough will be puffy, not punched down). Gently shape and put into greased 5 x 9-inch loaf pan (grease top if you like). Let rise 40 minutes to 1 hour (more or less depending on room temperature).Bake in 350 to 375 degree F oven for 25 to 35 minutes.

Add eggs; whip together. Add vanilla extract. Stir in coconut flakes, raisins and chopped pecans. Melt butter over low heat. Add milk, heating just enough to scald. Add to sugar-egg-coconut mixture. Place in a 12 x 8-inch baking dish with the French bread cubes. Put into a cold oven; bake at 350 degrees F for one hour.Serves 8.

Al Copeland's Basic Cajun Jambalaya1 tablespoon unsalted butter2 tablespoons vegetable oil2 medium onions, chopped1 pound pickled pork, diced1 pound smoked ham, diced2 cloves garlic, peeled and minced1/2 teaspoon dried thyme1 tablespoon chopped parsley1 pound smoked  sausage, sliced4 cups beef or chicken stock or hot water2 cups rice2 bay leaves1/2 teaspoon cayenne pepper or to tasteIn large saucepan with lid, melt butter with oil. Add onions and pork and saut? until onions are soft. Add ham, garlic, thyme and parsley and saut? 5 minutes. Add sausage and cook until browned. Stir in stock and bring to boil. Add rice, bay leaf and cayenne. Return to boil and cover. Simmer over very low heat 30 to 45 minutes, checking after 30 minutes to see if all liquid has been absorbed and rice is tender. If necessary, add 1/4 to 1/2 cup more water if liquid boils away before rice is cooked.Serves 8.

Cook over medium heat, stirring constantly, until flour browns, about 4 minutes.Add onion and bell pepper. Cook over medium heat, stirring constantly, about 5 minutes; gradually stir in broth. Add Worcestershire sauce, Tabasco and thyme; stir constantly until mixture boils and thickens.Cut a thin slice from top of each roll, and scoop out soft insides. Arrange meat on each roll. Spoon gravy over meat and replace tops on rolls.

A Nun's Sigh (Beignet Souffl?s)From New Orleans. So called as they are light as a nun's sigh, being made of chou paste, which is the base for cream puffs and ?clairs.1 cup sifted all-purpose flourPinch of salt1 tablespoon granulated sugar1 cup water1/3 cup butter4 eggs1  teaspoon vanilla extractFat (for deep-fat frying)Confectioners? sugarSift together flour, salt and sugar and set aside. Heat water and butter together until butter melts. Add flour combination all at once, and stir rapidly with a wooden spoon until dough leaves sides of pan and forms a lump. Remove from heat and beat in eggs, one at a time, beating hard after each addition. When dough is no longer slippery-looking, stir in vanilla extract. Scoop up a heaping teaspoon of the dough and, with a second teaspoon, push it off into preheated fat (350 degrees F on deep-fat thermometer, or until a 1-inch cube of bread browns in 60 seconds). When puffed and golden brown, drain on paper towels. Sprinkle with confectioners' sugar and serve hot. Makes several dozen.

Chill in refrigerator until perfectly cold. Slice and serve.

Devil's Tooth CheesecakeCrust1/4 cup (1/2 stick) melted butter1 package Nabisco chocolate cookie wafers, crushedMix butter and crumbs and press into a 10-inch Dutch oven, going up the sides at least 1 inch.Filling16 ounces cream cheese1 cup granulated sugar1 (16 ounce)  container ricotta cheese6 eggs1/2 cup sour cream1 1/2 teaspoons almond extract1 1/2 teaspoons vanilla extract12 ounces chocolate chips1/4 cup butter1/2 cup whipping creamMix first five ingredients until smooth. Melt chips, butter and whipping cream over low heat until smooth. Add almond extract. Pour 1/3 of white mixture into chocolate mixture and mix well. Pour this into crust.Add vanilla extract to remaining white mixture and carefully pour this over the chocolate layer already in the Dutch oven. This is very dense and takes about 1 1/4 hours to bake. It is done when the top cracks and is firm. This cheesecake is great warm or cold.

Cook noodles as directed then drain. Add noodles, sugar, and tomato sauce to ground beef. Stir.Combine sour cream, cottage cheese, cream cheese and onion. Put into a 3-quart casserole dish a layer of noodles and meat, then a layer of cheese mixture; add the remaining meat and noodle mixture. Add grated cheese. Bake at 350 degrees F for 25 to 30 minutes.Yields 10 to 12 servings.

Cut out the circles. Glue together a  section of the circles' edges to form a clover shape. Dab glue onto the shamrock and sprinkle on glitter. Glue the straw onto the back of the middle circle to form a handle. Let the glue dry. See how much magic you can create!
